Blackened Fish

Have you ever had blackened fish or anything else...maybe chicken?  If you haven't, you need to try it. It is the best in my opinion. It's a little spicy but if you make your own rub, you can totally control the heat volume. I had blackened fish at a restaurant a few months ago and was determined to make my own at home. So I googled some recipes and found this one on Food Network:

2 tablespoons paprika
1 teaspoon cayenne
1 teaspoon dried thyme
1 teaspoon chili powder
2 teaspoons garlic powder
1 teaspoon cumin
2 teaspoons sea salt
1 teaspoon freshly ground pepper

Mix seasoning well, rub onto your fish, chicken, etc. I always use Tilapia. It is a less expensive fish and solid so it doesn't fall apart when cooking.  Cook in a large saute pan over high heat in a little canola oil and butter.  Use a non-stick skillet if you can and you can use a tiny amount of oil and butter to keep it healthy.  Cook until done.

If you use fish, make sure you have fresh lemon wedges to squeeze over the fish.  It is to DIE for!  :)  YUM!
